Lemon S’mores #Recipe for Campfire or Microwave

Confession Time!  I am a marshmallow fanatic.  So anytime I’m able to incorporate marshmallows into a dessert, I do… especially gooey marshmallows.  Whether you’re looking for a dessert at your next fire pit, campfire, or bonfire, or you’re wanting something sweet and quick from the microwave, Lemon S’mores will fit both bills.

Ingredients for Lemon S'mores

Recommended Cooking Tools for Lemon S’mores

Microwave -or- Campfire, Firepit, or Bonfire

Marshmallow Roasting Sticks (if roasting over a fire)

Microwave-safe Plate (if using a microwave)

Butter Knife for spreading

Can Opener

You are just 3 ingredients and 20 seconds away from this gooey dessert.

I start by spreading a lemon pie filling generously over a graham cracker.  Of course, you can add as much or as little as you prefer.  I’m not looking over your shoulder so I won’t tell if you choose to lay it on nice and thick.  Go ahead!  No one’s looking.

Step 1: Slather lemon pie filling over the graham cracker

In the microwave:  

 I grab another graham cracker and place marshmallows on top.  I microwave the marshmallows and graham crackers for 15-20 seconds watching closely.  The marshmallows will begin to grow.  I usually allow them to grow for 2-3 seconds before stopping the microwave and pulling them out.  Adjust for your microwave accordingly and keep a close eye at least for first few times you make these.

I am so making these Lemon S'mores at my next campfire.

Hit Refresh

Over a fire:

Toast your marshmallow over the fire until it is perfectly golden brown – unless you like it burnt, then just burn away.  Once your marshmallows are perfectly toasted to your liking, place two toasted marshmallows on a graham cracker.

Regardless of how you get your marshmallows gooey, place the graham spread with lemon pie filling  together with the marshmallows graham.  Squeeze so the marshmallows ooze out ever so slightly.
