Creamy Chicken and Vegetable Soup is easily the family favorite soup at our house right now. This hearty soup is packed with flavor. I freeze leftovers for an easy meal on another day. If you only have one soup recipe, this is the one to have.

Creamy Chicken & Vegetable Soup
Ingredients
- 1/2 stick butter
- 12 oz baby potatoes – chopped bite size
- 5-8 oz carrots – chopped bite size
- 2-3 celery stalks with celery leaves – diced into bite size
- 1/2 medium onion – diced
- 1.25 lbs chicken – cut into bite sized pieces
- salt
- 1/8 cup all-purpose flour
- 32 oz chicken broth
- 1 cup dry pasta of choice (I used elbow macaroni)
- 1/2 tsp black pepper
- 1/2 tsp Herbs de Provence
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (Optional)
- 1 tsp salt
- 16 oz heavy cream
- 1 can peas – drained
- water as needed
Instructions
- In a large pot or stockpot, melt the butter.
- Add the chopped baby potatoes, carrots, celery with leaves, onion, and a little salt to the melted butter stirring occasionally until onions begin to become translucent.
- Add the chicken to the vegetables. If you are using cooked chicken, you can add at the same time as the peas. I let the chicken cook a few minutes.
- Add the flour. Stir until the flour is mixed throughout the vegetables and chicken.
- Cook the flour mixture for 3 -5 minutes.
- Add the chicken broth and stir.
- Add the pasta, black pepper, Herbs de Provence, garlic powder, cayenne pepper, and salt.
- Stir well.
- Allow to cook on medium low until the chicken is cooked through and the vegetables are all tender. I let mine cook for about 30 minutes.
- You may need to add water here if a lot of the liquid evaporates out.
- Add the peas (and cooked chicken) and stir.
- Add the heavy cream and stir well to make sure it is completely incorporated.
- Taste and adjust the salt and seasoning to your liking.

This recipe starts with butter… not nasty seed oils, but good old-fashioned butter. You can taste that butter in the soup once it’s done. The hearty vegetables are cooked in the butter and not just boiled in the soup. I cannot say enough about this combination of seasonings. Black pepper, Herbs de Provence, garlic powder, cayenne and salt all come together to pack this soup with flavor. Sometimes, I add minced garlic in addition to the garlic powder to get a bigger garlic flavor.
This recipe was inspired by a Facebook reel that I caught one day. I made her recipe for my husband adjusting slightly with some seasonings that we prefer. I also adjusted the recipe to account for using raw chicken in place of the rotisserie chicken that she used. It was good, but my husband immediately started suggesting some changes. Over time, I have adjusted and changed and tweaked this recipe until it is exactly what we like. The original recipe that I wrote down has scribbles and x’s all over it. It’s a mess which is why I decided that it was time to add it here.
