This recipe is so incredibly easy.  I start by making a boxed lemon cake according to the box directions.  Preheat your oven, prepare your rectangular cake pan, mix the ingredients, and bake exactly as the box tells you to do it.  Once the cake is done, allow it to cool completely.  You can pop it in the refrigerator to speed things up a bit.  Use the handle of a spoon to poke holes throughout the cake roughly about a half inch apart.

Next, I mix one package of strawberry gelatin with a cup of warm water.  The warm water helps the gelatin to dissolve better.  I like to mix them in a measuring cup because measuring cups usually have a spout for easy pouring.  Once the gelatin and water are mixed thoroughly, I pour it over the cake.  I refrigerate to chill for a little while (long enough to mix up the topping).

For the topping, I mix another package of strawberry gelatin with a tub of whipped topping.  Mix thoroughly.  I recommend a clear glass mixing bowl for this so you can be certain to mix all the gelatin and whipped topping… at the bottom especially.  Smooth the topping over the gelatin soaked cake and refrigerate until serving.  I recommend at least an hour or two… overnight is perfect.
