Caesar Chicken Pasta Salad #Recipe Lunch, Side Dish, or Appetizer

I just love a good pasta salad!  The BEST pasta salads, in my book, are both easy to put together and delicious.  With just six simple ingredients, this Caesar Chicken Pasta Salad definitely goes down as easy and delicious.  The only ingredient that needed to be cooked was the pasta!

This super simple recipe begins by cooking the pasta according to the package directions.  A quick stir here and there will help to keep the pasta from sticking to one another.  I sometimes add a pinch of salt to mine just for taste preference.  Once the pasta is cooked as desired, I strain the pasta and allow it to cool while I do some chopping.  I prefer my cucumber and celery to be cut into small pieces, but you may certainly cut your veggies any way you like them.  I also highly recommend including some celery leaves as you chop the celery for added flavor.  Finally, I chop up some mozzarella string cheese into small chunks.

In a large bowl, I mix the pasta, veggies, and cheese together.  I add the canned chicken breast which is precooked and couldn’t be any easier.  If I happen to have some leftover chicken or deboned rotisserie chicken like my local Costco sells in the deli section, I would use that instead, but the canned chicken is really good, too.  Lastly, I add the Caesar dressing until it is all just coated.

It should, ideally, be served cold, but I had a bowl right away, and it was just wonderful.  Keep the pasta salad refrigerated until you’re ready to serve.
