Delicious Creamy Broccoli Soup #Recipe

I love a good soup.  They are delicious accompanying a great meal or as a meal by itself.  Today, this Creamy Broccoli Soup starred next to a simple grilled cheese sandwich.  Soup & Sandwich is one of my favorite meals, and today’s soup and sandwich was delicious!

Honestly, my guys (husband and two teen sons) aren’t really crazy about any soup except maybe Chicken Soup.  I was surprised and delighted that they all liked this soup.  Broccoli is a popular vegetable around here.  I think that was all there was to it, but since I really enjoy eating a nice bowl of soup now and then, I will take it.

Today, I made this soup in a saucepan on the stove.  It came together very quickly and cooked in less than a half hour.  I will probably continue to cook this soup on the stove in the future most of the time.  However, I may occasionally opt for the slow cooker if the creamy broccoli soup were going to be a part of a slow cooker meal.  This soup would fit nicely into my triple slow cooker alongside a veggie and a dessert (or two desserts… heehee!)

To make this soup, I just tossed the frozen broccoli into a large sauce pan.  I added the cans of chicken broth, salt, butter, and heavy cream.  I cooked it on medium heat until the broccoli became tender.  At this point, I added fresh cracked black pepper and adjusted the seasoning to my liking.  I used a wooden spoon to break the broccoli apart.  This could certainly be served with the broccoli mostly whole or even pureed according to your preferences.  If my daughter were home today, I would puree the whole thing.
