This is my absolute favorite Split Pea Soup recipe. It is thick & hearty and loaded with vegetables and, of course, split peas. I used both yellow and green split peas in my recipe.

Start with vegetable oil in the bottom of my favorite soup pot. I add the chopped onion, chopped carrots, and chopped celery with the leaves. The celery leaves add so much flavor. Add a pinch of salt. Cook until the onions are translucent or for a few minutes. Add minced garlic and cook another minute.

Everything else gets added. Add the chicken stock, water, split peas, thyme, chives, salt , and black pepper. Bring it to a boil, cover the pot, then turn the heat down to a slow simmer. Simmer it for 2 hours. Serve warm by itself for a light meal or along side your favorite sandwich or salad.
