Tomato Soup: A Slow Cooker #Recipe

We recently had a big soup and sandwich night here.  We seldom agree on anything so I used my triple slow cooker to make three soups.  I made a Broccoli Soup for my teen boys.  Next, I made a Potato Soup for my husband who loves a thick and hearty soup.  Finally, I made this Tomato Soup for myself.  There was a little something for everyone.

I was walking the aisles of Costco when I spied the fire roasted whole tomatoes that I used for this recipe.  Of course, they are sold at other stores, too, but this is where the idea for this soup recipe began.  Any canned tomatoes would work for this recipe, and you may certainly substitute whatever canned tomatoes you have on hand, but I love the added depth of flavor that the fire roasted tomatoes bring to the recipe.

Really, the slow cooker does all the work until the end when the immersion blender finishes.  I literally just dumped all the ingredients into the slow cooker, gave it a quick stir, returned the lid securely, and cooked it all on HIGH for about 3-4 hours.  I probably could have cooked it less on high, but it was cooking at the same time as two other soups so I was attempting to have them all done at the same time.

Once it was cooked, I used an immersion blender to puree it.  Other blender or food processors can work just as well as long as you accommodate for the steam.  Once blended, serve and top with your favorite Tomato Soup toppings.  Saltines, cheese-flavored crackers, shredded cheese, chives, sour cream, chopped bacon, or ham all make nice toppings.

  • OK...two things...I've never heard of Triple Slow Cooker! What rock have I been living under? And...I love Tomato Soup. Pinning this for the upcoming cooler months.
